The Nutrition of Eggplant



This interesting vegetable grows very much like tomato. The eggplant season starts from August and ends in October. Besides its appearance and distinctive taste, eggplant boasts with several nutrients they contain.


Chlorogenic acid. This ingredient is known for the high activity of anti oxidants. It is the ingredient that dominates the eggplant and is known for its effectiveness in reducing bad cholesterol and fight free radicals.

Vitamin C is responsible for the effective operation of the immune system and good vision.

Minerals. They are one of the 6 primary materials that need to be entered daily in the human body. Potassium, magnesium and phosphorus are minerals that improve the effectiveness of some vitamins.
Minerals and vitamins are closely related because without some key vitamins, minerals cannot function properly. Since this is a two-way collaboration, without some key minerals, many vitamins lose their functionality.
